Prep Time: 5-10 minutes (will finalize based on how testing goes for the consistency of the chia jam. It will thicken the longer it sits, so if fine to use without waiting, will be more in the range of 5 minutes)
Cook Time: 2 to 3 minutes, per Quaker canister instructions
Yield: 1 serving (~170g)
3/4 cup QUAKER oats (dry, rolled)
3/4 cup water
Dash of salt (calculated at 0.125 tsp)
1/2 oz. chopped pecans (about 2 tablespoons chopped)
1/2 cup raspberries, fresh or frozen
1/2 tbsp chia seeds
1/2 tbsp balsamic glaze
1/2 tbsp honey
Optional: fresh basil, chopped or chiffonade
1. Add the berries to a small bowl along with the chia seeds, balsamic glaze, honey, and water. Use a fork to gently mash to a thick consistency, fully combining the chia seeds into the mashed berries. Set aside while you prepare the oats.
2. Add the oats to a separate bowl along with the water and salt. Microwave for 2 to three minutes per the instructions on the canister or until fully cooked. Remove from the microwave and stir.
3. Top the bowl with the raspberry-chia jam and chopped pecans. If using, top with fresh basil and serve immediately.
NOTES: If using frozen berries, allow to thaw and soften before mashing. Adjust the amount of water used for either the cooked oats or the raspberry-chia jam to achieve your desired consistency.
