Avocado & Beet Rice Cakes
Ingredients
2 Each Lightly Salted Rice Cakes
¼ Cup Avocado, Mashed
2 Tbsp. Goat Cheese, Crumbled
4 Each Pickled Beets Slices
2 Each Cherry Tomatoes, Quartered
2 Tbsp. Red Onion, Julienned
Instructions
Spread mashed avocado on one side of the Lightly Salted Rice Cakes.
Top each with an even amount of goat cheese, pickled beets, cherry tomato and red onion.
